Ceviche


Introduction

Bored with pan frying, baking or grilling fish? Don't have the palate for sushi? Don't know what do you with all that fresh fish that you caught? Well ceviche is a happy medium that will tickle your taste buds. Its a popular dish served in the coastal regions of Latin America.  Its is light, flavorful, low in calories and can be served as an appetizer or even a main dish!

Ingredients

Fresh Fish- This recipe uses King Salmon
Lime or Lemon
Tomatoes
Green peppers - jalapeno or serrano
Parsley or Cilantro
Onion
Salt and Pepper

Instructions

Chop up the salmon, tomatoes, onions, peppers and parsley. Place in a bowl. Add salt and pepper. Squeeze a whole lemon or lime into the bowl. Cover and refrigerate for 12-24 hours. The fish will appear opaque after the curing process. Its that simple!
