The Easiest Perch Recipe Ever!

Introduction
This pretty little fish that puts up a big fight for its size has a sweet delicate flavor! This recipe uses fresh caught perch fillets. Its simple enhancing the natural flavor of the fish and only takes minutes to prepare.

Ingredients
perch fillets
one whole egg
butter
milk
flour
salt
pepper
a generous amount of cayenne pepper
dried herb that works with fish lemon dill/ oregano or thyme

Instructions

Add a couple of tablespoons of milk, a few pinches of salt and pepper to the egg and beat it well. Add  salt, pepper and a generous amount of cayenne and a dried herb of your choice to the flour. I usually add enough cayenne until the flour turns into a pinkish hue.

Dredge the perch fillets in the egg wash and then cover the fillets in the cayenne flour mixture.

Warm some butter in a frying pan but do not let it burn.

Pan fry until golden brown- will take less than a minute on each side! Squeeze some lemon on the fillets. They will taste even better with sriracha mayo. That's 2 parts mayo to one part sriracha. If you don't have a taste for the spicy like I do go easy on the sriracha!
